Seasonal Produce: Salad!

With the weather that we’ve had over the past few weeks I’ve opted to keep it very simple this week. There really is something to be said for good ingredients speaking for themselves – and these salads prove that.

Marinated Prawn Mixed Leaf Salad

Ingredients
  • 60g Bistro Salad – with beetroot
  • 1 Carrot, peeled into ribbons
  • 1 Spring Onion, finely chopped
  • 1 tbsp. lentil sprout mix – Good4U do a good one!
  • 6-8 Marinated Cooked Prawns – you can pick the flavour
  • Olive Oil
  • Balsamic Vinegar
Method

Simply chuck the lettuce into a bowl, and add the carrot ribbons, spring onion, cherry tomatoes and lentil sprouts. Pour a good glug of olive oil and balsamic vinegar on top, and then add your marinated prawns to the top. Enjoy!

Coconut & Chilli Chicken Salad

Ingredients
  • 60g Lettuce Leaves
  • 1 Carrot, peeled into ribbons
  • 1 Spring Onion, finely chopped
  • 3cm Cucumber, cut into cubes
  • 1 tbsp. lentil sprout mix – Good4U do a good one!
  • 1-2 Fillets of Chicken – I’d recommend coconut and chilli
  • Olive Oil
  • Balsamic Vinegar
Method

Simply chuck the lettuce into a bowl, and add the carrot ribbons, spring onion, cucumber, cherry tomatoes and lentil sprouts. Pour a good glug of olive oil and balsamic vinegar on top, and then add your  chicken to the top. Enjoy!

Cherry Tomato Salad with Basil

This is an old classic which, using the right ingredients, is so simple and yet just beautiful. Great as a side for when you’re having a BBQ, or for enjoying with some flatbread or as a bruschetta topping. It really is that versatile!

Ingredients
  • 200g Cherry Tomatoes, preferably on the vine but not essential
  • ¼ Red Onion
  • ½ Bunch of Basil
  • 1 tbsp. Red Wine Vinegar
  • 2 tbsp. Olive Oil 
Method

Simply chop up the cherry tomatoes and finely slice the red onion and put into a bowl. Then finely chop the basil and add to the bowl. Finally pour in two tbsp. of olive oil and 1tbsp red wine vinegar and season well with sea salt. Mix together and enjoy.
